What’s your favorite comfort food?
Mine is fried chicken. I love that crispy crunchy crust. But to make it at home, who wants that mess? Not me. Let me show you my Easy Baked Chicken Tenders for when you want that fried chicken taste.
But not all of the mess!
My Sweet Instagram Friends and I are sharing comfort foods for this cold winter blog hop. Be sure and check out the ladies recipes at the bottom of this post.
Let’s start with just a few simple ingredients that you might already have in the pantry
I have made this recipe for years. My kids love it- it’s their favorite too. When they were small I probably made it at least once a week. You can serve it with french fries, veggies, or rice.
Make it for a snack or serve it as a meal.
You’re not going to believe how easy this is and with just a couple of ingredients from the pantry. Finely grated parmesan cheese and bread crumbs are the base. You can always dress it up a little if you choose. Add some extra herbs and spices that will suit your taste. Spice it up with paprika or chili powder. Whatever you like.
For today’s purposes, I have chosen chicken breast tenders. I bought a 2-pound package, washed and cleaned them. I have also made this recipe with full chicken breasts, chicken drumsticks, and even chicken thighs.
Using a cooking oil spray I prepare the baking dish before I assemble the chicken.
For that crispy crunchy yummy taste I use equal parts parmesan cheese and bread crumbs. Measure them into a a flat dish for rolling the chicken in.
Here is where you can add all your extra herbs and spices. Mix everything together well.
There are a few simple ways to get the crust to stick to the chicken- you can use an egg wash, milk, water, or oil. I like to use cool water or olive oil. Water doesn’t add any extra fat, so I often chose that first. But sometimes I like the extra flavor an olive oil can provide.
Continue until all of your pieces have been coated then bake in the oven at 350 degrees for 35-40 minutes or until the chicken temps at 165 degrees.
